Confetti scalloped potatoes
Ingredients/Components
- pkg - 1 oz
- butter or margarine - 1/2 c
- chopped onion - 1/2 c
- dash of pepper - 1 item
- 4 oz - 1 c
- soup can milk - 1 item
- chopped pimento - 2 Tbsp
- can condensed cream of mushroom soup, undiluted - 1 3/4
- small green pepper, cut into strips - 1 item
- cheese cracker crumbs, divided - 1 c
How to make confetti scalloped potatoes:
In a skillet, melt butter over medium heat. Saute onion until tender. Stir in potatoes, soup and milk. Add cheese, green pepper, pimiento, pepper and 1/2 cup of the crumbs. Pour into a shallow casserole. Top with remaining crumbs. Bake at 375° for 35 to 40 minutes. Yields 6 to 8 servings.Recipe categories: Side dish, Potato, Vegetables.
