Confetti scalloped potatoes
Ingredients/Components
- pkg - 1 oz
- butter or margarine - 1/2 c
- salt - 1 tsp
- chopped onion - 1/2 c
- shredded Cheddar cheese - 1 c
- can cream of mushroom soup - 1 item
- soup can milk - 1 item
- chopped pimentos - 2 Tbsp
- dash of black pepper - 1 item
- small green pepper, cut into strips - 1 item
- cheese cracker crumbs, divided - 1 c
How to make confetti scalloped potatoes:
In a skillet, melt butter over medium heat. Saute onion until tender. Stir in potatoes, soup and milk. Add cheese, green pepper, pimentos, pepper, salt and 1/2 cup of the crumbs. Pour into a shallow casserole. Top with remaining crumbs. Bake at 350° for 35 to 40 minutes.Recipe categories: Side dish, Potato, Vegetables.
