Coffee cake muffins
Ingredients/Components
- sugar - 1/2 c
- cinnamon - 2 tsp
- milk - 1/2 c
- salt - 1/2 tsp
- chopped nuts - 1/2 c
- flour - 2 Tbsp
- brown sugar - 1/2 c
- baking powder - 2 tsp
- melted butter - 2 Tbsp
- shortening - 1/4 c
- sifted flour
- egg, beaten - 1 item
How to make coffee cake muffins:
Combine brown sugar, nuts, flour, cinnamon and melted butter. Set aside. Sift dry ingredients into bowl and cut in shortening. Combine egg and milk and add to flour mixture. Stir just until moistened. In greased muffin tins, spoon small amount of batter. Add a layer of nut mixture. Add more batter and top with nut mixture. Repeat until 2/3 full.
