Ingredients/Components
- sugar
- eggs - 3 item
- vanilla - 1 tsp
- salt - 1/2 tsp
- flour - 2 c
- soda - 1 tsp
- cocoa - 6 Tbsp
- powdered sugar - 1 to
- hot water - 1/4 c
- oleo or butter - 1/2 c
- coffee - 1 c
- cocoa melt cocoa in hot coffee - 6 Tbsp
- Sift flour, soda and salt into same bowl, alternating with coffee-cocoa mixture
How to make coffee cake:
In large bowl, mix the sugar, oleo and eggs until well blended. Sift flour, soda and salt into same bowl, alternating with coffee-cocoa mixture. Add vanilla and mix all. Bake 25 to 30 minutes in a 350° oven. Makes 2 (9-inch) layers or 1 rectangle.Chocolate Frosting:1/2 stick oleo1 1/2 to 2 c. powdered sugar1/4 c. hot water1 tsp. vanilla6 Tbsp. cocoa Place oleo and cocoa in top of double boiler. Heat until oleo is melted. Remove top pan and set aside for 2 minutes. Then add 1/4 cup hot water from bottom of boiler. Beat in powdered sugar until right for spreading.
