Ingredients/Components

  • large onion, chopped - 1 item
  • canned tomatoes, chopped - 1 qt
  • chopped clams - 1 qt
  • water and clam juice - 1 qt
  • slices 2 x 1-inch fatback - 2 item
  • small potatoes, chopped finely - 4 item
  • salt, hot sauce and Worcestershire sauce to taste - 1 item

How to make clam chowder:

Use a heavy pot. Fry fatback and saute onion. Add liquid, tomatoes, potatoes and seasoning. Cook until potatoes are done, then add clams and continue to cook for 10 to 15 minutes. Serves 8. (For larger amounts, increase proportionately.)
