Ingredients/Components

  • pkg - 1 oz
  • salt - 1 Tbsp
  • water - 4 qt
  • egg - 1 item
  • pepper - 1 tsp
  • clove garlic, minced - 1 item
  • chopped celery - 1 c
  • cloves garlic, minced - 2 item
  • Parmesan cheese - 1/2 c
  • bread crumbs - 3/4 c
  • oregano - 1 tsp
  • basil - 1 tsp
  • can tomato paste - 1 oz
  • parsley - 2 tsp
  • olive oil - 2 Tbsp
  • medium onion, chopped - 1 item
  • can tomatoes - 1 lb
  • carrot, sliced - 1 item
  • can each: baked beans and juice, kidney beans, garbanzo beans and frozen, chopped spinach - 1 lb
  • Add tomatoes, tomato paste, water and seasonings

How to make minestrone soup:

Saute celery, onion and garlic in olive oil. Add tomatoes, tomato paste, water and seasonings. Cook to boiling. Make meatballs.Meatballs:1 1/2 lb. ground beef3/4 c. bread crumbs1/2 c. Parmesan cheese2 Tbsp. parsley1 clove garlic, minced2 tsp. salt1 tsp. pepper1 egg Bake in a 400° oven for 20 minutes; add to soup. Simmer 30 minutes. Add rest of ingredients except spaghetti and simmer 30 minutes. Add spaghetti and boil until tender. Simmer 15 minutes.
