Chocolate zucchini cake
Ingredients/Components
- sugar - 2 c
- cinnamon - 1 tsp
- eggs - 3 item
- vanilla - 2 tsp
- chopped pecans - 1 c
- milk - 1/2 c
- salt - 1 tsp
- flour
- cocoa - 1/2 c
- baking powder
- baking soda
- soft butter - 3/4 c
- grated orange peel - 1 Tbsp
- shredded zucchini - 2 c
- Beat butter, eggs one at a time and baking soda until smooth
How to make chocolate zucchini cake:
Sift together salt, flour, cinnamon, cocoa, sugar and baking powder. Beat butter, eggs (one at a time) and baking soda until smooth. With a spoon stir in vanilla, grated orange peel and shredded zucchini. Add dry ingredients alternately with milk. Add chopped pecans or walnuts.Bake in 10-inch tube pan or Bundt pan at 350° for one hour. Cool 15 minutes. Drizzle glaze over cake.Glaze:2 c. powdered sugar3 Tbsp. milk1 tsp. vanilla Beat until smooth.
