Ingredients/Components
- vanilla - 2 tsp
- milk
- oil - 2 Tbsp
- cocoa
- corn syrup - 2 tsp
- powdered sugar
- margarine - 3 Tbsp
- instant vanilla pudding - 2 pkg
- frozen whipped topping - 9 oz
- graham crackers - 1 lb
How to make chocolate eclair cake:
Frosting:6 Tbsp. cocoa2 Tbsp. oil2 tsp. corn syrup2 tsp. vanilla3 Tbsp. margarine1 1/2 c. powdered sugar3 Tbsp. milk Scald milk if it is raw. Cool. Line a 13 x 9 x 2-inch pan with graham crackers. Mix pudding with milk. Beat at medium speed for 2 minutes. Blend in whipped topping. Pour 1/2 of mixture over graham crackers, then place second layer of crackers over pudding. Pour rest of pudding over this. Refrigerate for 2 hours, then frost. Refrigerate 24 hours. This is also good frozen.Frosting: Beat all ingredients until smooth.
