Chinese noodle salad
Ingredients/Components
- thinly sliced celery - 1/2 c
- toasted sesame seed - 1 item
- Chinese noodles - 1/2 lb
- thinly sliced green onions - 1/2 c
- salted cashews - 1/2 c
- can water chestnuts, chopped - 1 item
- sugar or 1 pkg - 2 tsp
- diced red and green peppers
- Break noodles into thirds and add to water
- each: oyster sauce, soy sauce and lemon juice - 2 Tbsp
How to make chinese noodle salad:
In a 5 to 6-quart pan, bring 3 quarts water to a boil over high heat. Break noodles into thirds and add to water. Cook, uncovered, just until barely tender to bite, about 4 to 5 minutes. Drain noodles and rinse with cold water until cool; drain well. In a serving bowl, mix noodles, peppers, celery, onion, water chestnuts and dressing (below). Sprinkle with cashews and sesame seed. Good immediately; better the next day.Dressing:1 tsp. Oriental sesame oil2 Tbsp. each: oyster sauce, soy sauce and lemon juice2 tsp. sugar or 1 pkg.
