  • sour cream - 2 c
  • uncooked rice - 1 c
  • Cheddar cheese - 1/2 lb
  • Monterey Jack cheese - 1 lb
  • can whole chilies - 4 6

How to make chili rice:

Cook rice according to directions. Mix rice and sour cream; add salt to taste. Seed and chop chilies. Grate cheeses.

In a casserole dish, put about half of rice mixture, all of the chopped chilies and half of each of the cheeses. Next layer the rest of the rice, topping it off with the remainder of the cheeses. Bake at 350° for 35 to 45 minutes until it bubbles at the sides.
