Ingredients/Components

  • half and half - 3/4 c
  • pkg - 8 oz
  • salt - 1 tsp
  • flour - 3 Tbsp
  • nutmeg - 1/8 tsp
  • margarine - 1/4 c
  • chopped fresh parsley - 1 Tbsp
  • chicken broth - 2 c
  • dash of pepper - 1 item
  • grated Mozzarella - 1 c
  • grated Parmesan - 1/2 c
  • sherry - 2 Tbsp
  • jar mushrooms
  • cubed chicken - 3 c

How to make chicken tetrazzini:

Heat oven to 350°. Cook spaghetti as directed; set aside. In Dutch oven, melt margarine. Stir in flour. Add chicken broth and cook, stirring constantly, until sauce is thickened. Remove from heat. Stir in half and half, sherry, parsley, salt, nutmeg and pepper. Toss chicken, mushrooms and spaghetti into sauce. Put 1/2 of Mozzarella cheese into this mix.

Pour all into 9 x 13-inch pan. Sprinkle with Parmesan and rest of Mozzarella. Bake at 350° for 30 to 40 minutes or until thoroughly heated. (Can freeze and then bake later.) Serve with parsley garnish.
