Chicken tamale bake
Ingredients/Components
- flour - 1 Tbsp
- cloves garlic, minced - 2 item
- can chicken broth - 1 oz
- 2 oz - 1/2 c
- salt optional - 3/4 tsp
- olive oil - 1 tsp
- ground cumin - 1 tsp
- oregano leaves, crushed - 1/2 tsp
- picante sauce
- yellow corn meal - 1/2 c
- large bell pepper, diced - 1 item
- cilantro optional - 1/4 c
- shredded or chopped chicken - 3 c
- small tomato, seeded and chopped - 1 item
- large onion, cut in thin wedges - 1 item
How to make chicken tamale bake:
Combine broth and corn meal in medium saucepan. Bring to a boil, stirring constantly with wire whisk. Whisk in 1/2 cup of picante sauce. Reduce heat to low; cook until very thick, whisking occasionally, about 15 minutes. Set aside.Cook onion and garlic in olive oil in 10-inch skillet until tender, about 4 minutes. Sprinkle with flour; cook and stir 1 minute. Add chicken, remaining picante sauce, cumin, salt and oregano. Simmer uncovered until thickened, about 1 minute. Stir in bell pepper. Transfer to 8-inch square baking dish. Spoon corn meal mixture over chicken. Bake at 350° for 35 minutes. Sprinkle with cheese. Spoon tomato around edges, cilantro in the middle. Makes 6 servings, 269 calories per serving.
