Ingredients/Components

  • cut up fryer - 4 lb
  • boiled ham - 4 oz
  • large tomatoes, skinned, seeded and chopped - 4 item
  • pimentos, seeded and chopped - 6 item
  • clove garlic - 1 item
  • shallots, chopped - 2 item
  • white wine - 1 c
  • each: thyme, bay leaf, salt, pepper and chopped parsley - 1/4 tsp

How to make basque chicken:

Flour chicken very lightly, shaking off all excess. Melt butter or heat oil in skillet on medium heat and turn chicken in this until pale golden. (This is far less than the usual browning of chicken.) Transfer chicken into covered casserole dish. Put in 300° oven for about 15 minutes.

While chicken is in oven, into the skillet add tomatoes, ham, pimento, garlic, shallots, mushrooms (if you are using them) and all seasonings. Blend for about 5 minutes. Add white wine and simmer another 5 minutes. Pour over chicken and bake at 300° for 45 to 60 minutes. Serve sprinkled with chopped parsley. Accompany with egg noodles tossed lightly with butter, a green salad and a bottle of light Bordeaux. Serves 4.
