Chicken scampi
Ingredients/Components
- milk - 2 Tbsp
- margarine or butter - 1/2 lb
- Parmesan cheese - 1 item
- pinch of oregano - 1 item
- black pepper - 1/4 tsp
- garlic powder to taste - 1 item
- boneless chicken - 1 lb
- fresh or frozen broccoli - 2 c
- cooked linguine - 1 lb
How to make chicken scampi:
Cook broccoli until tender. Set aside. Cut chicken into bite-size pieces.In a large skillet, melt margarine. Add milk and stir. Spread chicken pieces in pan and season with pepper, oregano and garlic (I use approximately 2 teaspoons).
Over low heat, simmer and stir until chicken is cooked. Add broccoli and a little more garlic powder, if desired. Serve over linguine with Parmesan cheese. Serves 4 to 6.
