Ingredients/Components

  • milk - 2 Tbsp
  • margarine or butter - 1/2 lb
  • Parmesan cheese - 1 item
  • pinch of oregano - 1 item
  • black pepper - 1/4 tsp
  • garlic powder to taste - 1 item
  • boneless chicken - 1 lb
  • fresh or frozen broccoli - 2 c
  • cooked linguine - 1 lb

How to make chicken scampi:

Cook broccoli until tender. Set aside. Cut chicken into bite-size pieces.

In a large skillet, melt margarine. Add milk and stir. Spread chicken pieces in pan and season with pepper, oregano and garlic (I use approximately 2 teaspoons).

Over low heat, simmer and stir until chicken is cooked. Add broccoli and a little more garlic powder, if desired. Serve over linguine with Parmesan cheese. Serves 4 to 6.
