- salt - 1 Tbsp
- water - 2 qt
- pepper - 1/8 tsp
- chopped onion - 1/4 c
- chopped celery - 1 c
- peppercorns - 6 item
- rice - 1/2 c
- stewing chicken, cut in pieces - 3 lb
How to make chicken rice soup:
Combine chicken, water, salt and peppercorns in a large saucepan. Cover. Simmer 2 1/2 hours until chicken is tender. Remove chicken and peppercorns. Skim off fat. Cut chicken into small cubes. Add chicken and remaining ingredients to broth. Cover; simmer 30 minutes until rice is tender. Makes 6 to 8 servings.Recipe categories: Soups & stews, Chicken, Poultry.
