  • light cream - 1/3 c
  • pepper - 1/8 tsp
  • Parmesan cheese - 1 c
  • chicken stock - 3/4 c
  • clove garlic, mashed - 1 item
  • stewing chicken, cooked and cut into bite-sized pieces - 1 (5
  • dash of basil and marjoram - 1 item
  • Melt butter; stir in garlic, basil and marjoram

How to make chicken florentine:

Cook spinach and drain completely. Melt butter; stir in garlic, basil and marjoram. Blend in flour. Add cream, stirring constantly until mixture thickens and bubbles. Remove from heat; stir in spinach. Place mixture in a 2-quart baking dish. Cover spinach mixture with chicken.Sauce:3 Tbsp. butter3 Tbsp. flour3/4 c. light cream3/4 c. chicken stock1/4 tsp. salt1/8 tsp. pepper1 c. Parmesan cheese Melt butter; blend in flour. Add cream, chicken stock, salt and pepper, stirring constantly over medium heat until thickened.

Pour sauce over chicken. Top with Parmesan cheese. Bake 20 minutes in preheated 400° oven.
