How to make southwestern chicken:
Place 1/2 cup Southwestern Seasoning in a large Ziploc heavy-duty plastic bag. Lightly beat egg white in a shallow dish; dip chicken into egg white, turning to coat. Add chicken to bag; seal bag and shake to coat. Place chicken on a 15 x 10 x 1-inch jelly-roll pan coated with cooking spray. Lightly coat chicken with cooking spray. Bake at 400° for 45 minutes or until done. Yields 4 servings.Southwestern Seasoning:2/3 c. yellow corn meal1/3 c. Italian seasoned breadcrumbs1/4 c. grated Parmesan cheese1 Tbsp. plus 1 tsp. chili powder1 Tbsp. plus 1 tsp. ground cumin1 Tbsp. plus 1 tsp. garlic powder1 tsp. sugar1/2 tsp. ground red pepper Combine all ingredients in large Ziploc heavy-duty plastic bag; seal bag and shake well.
