Ingredients/Components

  • pkg - 3 oz
  • milk - 1/2 c
  • sour cream - 1 c
  • chopped onion - 1/4 c
  • chopped, cooked chicken - 2 c
  • cans cream of chicken soup - 2 item
  • cumin - 1/2 tsp
  • small flour tortillas - 12 item
  • can green chilies, drained optional - 4 oz
  • shredded Jack cheese with jalapenos optional - 1 c

How to make chicken enchiladas:

Combine first 5 ingredients and puree in blender. Set aside. Mix chicken, cream cheese and onion. Season with salt, pepper and cumin. Spread chicken mix in tortillas and roll. Lay in baking dish and top with sour cream mixture and Jack cheese. Cover with foil and bake at 350° for 30 minutes. Remove foil last 5 minutes. Makes 12.
