  • onion optional - 1 item
  • medium cans enchilada sauce - 2 item
  • chicken breast fillets boneless - 4 item
  • small flour or corn tortillas - 1 count)

How to make chicken enchiladas:

Boil chicken 20 minutes. Rinse in cold water to cool. Slice or cut into strips or cubes.

Pour a small amount of sauce into baking dish, enough to cover bottom. Grate cheese. Dice onion. Dip each tortilla into remaining sauce. Fill with chicken, cheese and onion and roll. Place in baking dish. Cover enchiladas with remaining sauce, cheese and onions. Bake at 350° for 30 minutes. Serves 6.
