Chicken enchiladas
Ingredients/Components
- sour cream - 1 c
- salt and pepper to taste - 1 item
- cans cream of chicken soup - 2 item
- Cheddar cheese - 1 c
- flour tortillas - 1 doz
- Jack cheese - 1 c
- small can mild diced green chilies - 1 item
How to make chicken enchiladas:
Cook, bone and dice chicken into bite sized pieces. Mix chicken, 1 can soup, 1/2 of cheese, chilies, sour cream, salt and pepper. Divide evenly (about 3 tablespoonfuls) among the tortillas. Roll up and place in 9 x 13-inch baking dish. Pour other can of soup over tortillas. Put rest of cheese on top. Bake at 350° for 30 minutes.Recipe categories: Chicken, Main dish, Poultry.
