  • chopped onion
  • shredded lettuce - 4 c
  • diced tomato - 1/2 c
  • Cheddar cheese
  • skinned boneless chicken breast halves - 5 item
  • cans enchilada sauce - 3 oz
  • 6 inch corn tortillas - 8 item

How to make chicken enchiladas:

Combine chicken and enough water to cover in a medium saucepan. Cook over medium heat until tender (about 15 to 20 minutes). Drain and cool slightly. Shred chicken and set aside.

Coat a nonstick skillet with cooking spray; place over medium heat. Add onion and saute until tender. Add 1 can enchilada sauce and chicken. Cook 5 minutes. Soften tortillas by wrapping in aluminum foil and baking at 350° for 1 minute. Fill each shell with chicken mixture, roll up and place, seam side down, in a 13 x 9 x 2-inch baking dish. Pour remaining 2 cans on enchilada sauce over tortillas. Top with cheese. Bake at 350° for 10 minutes. Serve with shredded lettuce, chopped tomato and sour cream.
