- chicken broth - 1 c
- chicken breasts - 2 item
- cans cream of chicken soup - 3 item
- Cheddar cheese, grated - 2 c
- small can green chilies, chopped - 1 item
- small flour tortillas - 2 doz
How to make chicken enchiladas:
Cook chicken and remove bones and skin. Cut chicken in small pieces. Mix soup, sour cream, chilies and cheese and then add approximately 1 cup chicken broth. Mix 1/2 of mixture with chicken. Spread small amount of mixture without chicken in two 9 x 13-inch pans. Put chicken mixture in tortillas one at a time and roll and place in pan. Spread remaining sauce over top; sprinkle with a small amount of cheese and bake at 350° for 25 to 30 minutes.Recipe categories: Chicken, Main dish, Poultry.
