Chicken enchiladas
Ingredients/Components
- water - 1 c
- oil - 2 Tbsp
- chopped onion - 1/2 c
- chili powder - 3 4
- cooked chicken - 2 c
- salt and pepper to taste - 1 item
- cans tomato sauce - 2 oz
- chopped black olives - 1/2 c
- cloves garlic, finely chopped - 2 item
- 7-inch flour tortillas - 8 item
- shredded Cheddar - 1/2 c
- cheese for topping - 1 item
- green chiles or hot peppers, chopped optional - 1/4 c
How to make chicken enchiladas:
Heat oven to 350°. Mix chopped chicken, onions, olives, peppers and 1/2 cup cheese. Set aside. Cook and stir garlic in oil until tender. Stir in sauce, water and chili powder. Heat through. Add salt and pepper to taste. Place 3 to 4 tablespoons filling on each tortilla. Roll up. Place seam side down in rectangular baking dish (12 x 7 1/2 x 2-inch). Spoon remaining chicken filling over tortillas. Pour sauce over tortillas. Sprinkle with remaining cheese. Bake until hot, 15 to 20 minutes. Serves 4.Recipe categories: Chicken, Main dish, Poultry.
