Ingredients/Components

  • hamburger - 1 lb
  • clove garlic - 1 item
  • vinegar - 1 Tbsp
  • water - 1 Tbsp
  • chili powder - 1 Tbsp
  • can kidney beans and juice - 1 item
  • tortillas - 1 item
  • grated Jack cheese - 2 c
  • oil
  • chopped onion - 1/2 c
  • flour - 2 Tbsp
  • can enchilada sauce - 1 oz
  • tomato sauce - 1 (8
  • boiling water - 1 bouillon
  • Tabasco sauce - 1 tsp
  • cumin - 1 tsp
  • salt and pepper - 1 item

How to make enchiladas:

Sauce:3 Tbsp. oil1 clove garlic1/2 c. chopped onion2 Tbsp. flour1 (10 oz.) can enchilada sauce1 (8 oz.) tomato sauce1 Tbsp. vinegar1 beef bouillon cube, dissolved in 1 c. boiling water1 tsp. Tabasco sauce1 tsp. cumin salt and pepper Saute hamburger and garlic. Drain. Add vinegar, water, chili powder and kidney beans with juice. Set aside.

For the sauce, heat oil. Saute garlic and chopped onion until clear. Remove from heat and add flour. Stir until smooth. Add enchilada sauce and tomato sauce. Bring to boil, stirring carefully not to burn. Add vinegar, beef bouillon, Tabasco sauce, cumin, salt and pepper.

To Make: Heat tortillas (2 at a time) until soft. Fill with meat mixture and roll. Pour sauce over. Cover with grated cheese. Bake at 350° for 25 to 30 minutes. Cover with foil.
