Chicken enchiladas
Ingredients/Components
- salsa - 1 c
- Monterey Jack cheese, shredded - 2 c
- 1 can green chilies, chopped - 4 oz
- 10 inch flour tortillas - 8 item
- rice, instant - 1 c
- 1 can chicken breast drained - 13 oz
- 1 can enchilada sauce - 15 oz
How to make chicken enchiladas:
Cook rice according to directions.Mix together: rice, chicken, salsa, chilies and cheese. Spoon mixture into tortillas. Tuck ends in and roll. Place in a 9x13-inch baking dish. Put cheese on top. Pour enchilada sauce over all.
Bake at 400° about 15 minutes, until cheese melts.
NOTE: Can substitute 1/2 lb. browned hamburger (drained) for chicken.
