Ingredients/Components
- stewed chicken, boned and cubed - 1 item
- stick oleo - 1 item
- tortillas small size - 2 pkg
- cans cream of chicken soup - 2 item
- cans green chilies, chopped - 2 oz
- can evaporated milk - 1 oz
- small onion - 1 item
- Longhorn cheese - 1/2 lb
How to make chicken enchilada casserole:
Spread buttered tortillas in bottom of 13 x 9 x 2-inch dish. Spread all of chicken over tortillas. Sprinkle half of cheese over chicken. In a saucepan, put onions, chilies, oleo, soup and milk. Simmer 10 minutes. Pour over chicken layers. Add another layer of tortillas and rest of cheese.
