Ingredients/Components

  • flour - 2 Tbsp
  • butter - 1/2 c
  • dry mustard - 1/4 tsp
  • chicken broth
  • bay leaf - 1/2 item
  • clove garlic - 1 item
  • medium onion, chopped - 1 item
  • stalk celery, diced - 1 item
  • sprig of parsley - 1 item
  • mace - 1/2 tsp
  • tart apple - 1 item
  • or more curry
  • cubed, boned, raw chicken - 3 c
  • raw ham, chopped - 1/4 lb

How to make chicken curry:

In a large pot, heat butter; add the onion, garlic, celery, bay leaf, parsley, mustard, apple and ham. Cook eight minutes, stirring occasionally.

Mix in the flour, mace and curry powder; cook four minutes longer. Add the broth and simmer, covered, one hour. Rub the mixture through a sieve and return to the saucepan. Add the chicken and simmer until tender, about ten minutes. Serve hot over boiled rice.
