Chicken curry
Ingredients/Components
- flour - 2 Tbsp
- butter - 1/2 c
- dry mustard - 1/4 tsp
- chicken broth
- bay leaf - 1/2 item
- clove garlic - 1 item
- medium onion, chopped - 1 item
- stalk celery, diced - 1 item
- sprig of parsley - 1 item
- mace - 1/2 tsp
- tart apple - 1 item
- or more curry
- cubed, boned, raw chicken - 3 c
- raw ham, chopped - 1/4 lb
How to make chicken curry:
In a large pot, heat butter; add the onion, garlic, celery, bay leaf, parsley, mustard, apple and ham. Cook eight minutes, stirring occasionally.Mix in the flour, mace and curry powder; cook four minutes longer. Add the broth and simmer, covered, one hour. Rub the mixture through a sieve and return to the saucepan. Add the chicken and simmer until tender, about ten minutes. Serve hot over boiled rice.
