Chicken cacciatore
Ingredients/Components
- salt - 1/4 tsp
- flour - 1 Tbsp
- cloves garlic, minced - 3 item
- chicken broth - 1/2 c
- dry white wine - 1/2 c
- black pepper - 1/2 tsp
- parsley, chopped - 2 tsp
- canned tomatoes - 1/2 c
- onion, quartered - 1 item
- olive oil or vegetable oil - 2 tsp
- mushrooms, quartered - 1 c
- green pepper, sliced in strips - 1/2 c
- chicken boneless, skinned - 1 lb
How to make chicken cacciatore:
Heat oil in a skillet. Saute onion, garlic and green pepper until softened. Stir in flour, tomatoes, chicken broth and wine until thickened. Cut chicken into bite size pieces and add to onions along with mushrooms, parsley, salt and pepper. Cover and simmer 20 to 25 minutes. Makes 2 servings.Exchanges: 3 meat, 2 vegetable and 1 fat.
