Chicken breasts diane
Ingredients/Components
- butter or margarine - 2 Tbsp
- salt - 1/2 tsp
- Dijon mustard - 2 tsp
- chicken broth - 1/4 c
- chopped parsley - 3 Tbsp
- black pepper - 1/4 1/2
- brandy optional - 2 Tbsp
- olive or salad oil - 2 Tbsp
- juice of 1/2 lime or lemon
- chopped chives or green onions - 3 Tbsp
- large boneless chicken breast halves - 4 item
How to make chicken breasts diane:
Place chicken between waxed paper and pound with a mallet, slightly. Sprinkle with salt and pepper. Heat 1 tablespoon each of oil and butter in a large skillet. Cook breasts over high heat for 4 minutes on each side. Do not cook longer. Transfer to a warm serving platter. Add next 5 ingredients to pan; cook 15 seconds, whisking constantly.
