Chicken and vegetable stir-fry
Ingredients/Components
- pkg - 1 oz
- salt - 1/8 tsp
- vegetable oil - 1 2
- pepper - 1/8 tsp
- medium tomato - 1 item
- chicken broth - 1/4 c
- basil - 1/4 tsp
- onion, chopped - 1/4 c
- parsley - 1/3 c
- carrots, sliced - 2 item
- garlic - 1/4 tsp
- cooking wine - 2 Tbsp
- boneless chicken breasts 1/4-inch strips - 4 item
How to make chicken and vegetable stir-fry:
Heat oil in a large skillet over medium heat. Add carrots and onion. Saute vegetables 8 minutes. Remove vegetables from skillet, reserving pan drippings. Set vegetables aside.Add chicken, basil, salt and pepper. Saute chicken 3 to 4 minutes, until browned, adding oil, if needed. Add vegetables and cooking wine. Cover, reduce heat and simmer 10 minutes. Stir in snow peas, tomato and parsley. Cook until heated. Serve with rice.
