Chicken and broccoli bake



  • lemon juice - 1 tsp
  • can cream of chicken soup - 1 item
  • curry powder - 1 tsp
  • mayonnaise - 1/2 c
  • grated Cheddar cheese - 1/2 1
  • chicken - 1 item
  • buttered bread crumbs - 1 item
  • frozen broccoli spears - 1 pkg

How to make chicken and broccoli bake:

Cook fryer in boiling water with 1/2 tablespoon dry onion, stalk celery and 2 teaspoons of salt. Not too much water. (Use rich broth to cook rice.) Cook chicken until tender. Let cool until skin can be removed and cut in bite-size pieces. Steam broccoli until just tender. Drain and place in bottom of casserole. Add chicken.

Make sauce of soup, mayonnaise, lemon juice and curry. Spoon over chicken and broccoli. Sprinkle with grated cheese and put buttered bread crumbs on top. Bake 30 minutes at 325°. If the chicken has been refrigerated, cook longer. Strain the water in which the chicken was boiled and use it to cook one cup rice. Serve rice with chicken casserole.
