Chicken marbella



  • brown sugar - 1/4 c
  • red wine vinegar - 2 Tbsp
  • salt and pepper to taste - 1 item
  • oregano - 1 Tbsp
  • olive oil - 2 Tbsp
  • white wine - 1/4 c
  • Italian parsley, chopped - 1 Tbsp
  • chicken, cut in pieces - 1 item
  • 1/2 bay leaves - 1 item
  • capers with a bit of juice - 1/8 c
  • head garlic, peeled and minced - 1/4 item
  • pitted prunes wet kind in jar or can, not dried - 1/4 c
  • pitted Spanish green olives the pimento kind is okay - 1/8 c

How to make chicken marbella:

In a large bowl, combine chicken, garlic, oregano, pepper and salt to taste, vinegar, olive oil, prunes, olives, capers and juice and bay leaves. Cover and marinate, refrigerate overnight.

Arrange chicken in a single layer in a large shallow baking pan and spoon marinade over. Sprinkle chicken with brown sugar and pour white wine around pieces. Bake chicken at 350° for 50 minutes to 1 hour, basting frequently until done. Transfer chicken to platter with prunes, olives and capers. Spoon a little juice over and sprinkle with parsley. Pass rest of pan juice in gravy dish.
