Broccoli, chicken and rice casserole



  • butter or margarine - 4 Tbsp
  • can cream of chicken soup - 1 item
  • bread crumbs - 1/4 c
  • can cream of mushroom soup - 1 item
  • grated Cheddar cheese - 1 c
  • onion - 1/4 c
  • green pepper - 1/4 c
  • chopped broccoli - 1 pkg
  • small jar Cheez Whiz - 1 item
  • uncooked Minute rice
  • to 4 chicken breasts, diced - 2 item

How to make broccoli, chicken and rice casserole:

Saute the green pepper and onions in the 4 tablespoons of butter until tender. Add diced chicken and saute until just done (do not overcook). Add and stir until smooth, cream of mushroom soup, cream of chicken soup, Cheez Whiz and 1/2 cup of the Cheddar cheese.

Drain the broccoli, which has been cooked for 5 minutes. Add to other ingredients. Stir in uncooked Minute rice and immediately pour entire mixture into buttered casserole dish. Sprinkle with remaining cheese and bread crumbs. Bake for 25 to 30 minutes at 350°.
