  • water - 1/2 c
  • vinegar - 2 Tbsp
  • soy sauce - 2 Tbsp
  • cloves garlic, mashed - 4 item
  • bay leaves - 3 item
  • whole black pepper - 1/2 tsp
  • patis - 2 Tbsp
  • whole chicken, cut into bite size pieces - 1 (3
  • aji optional - 1/2 tsp

How to make chicken adobo:

Mix soy sauce, patis, vinegar, salt, garlic, black pepper, aji, bay leaves and cold water; stir until salt is dissolved. Pour over meat; let marinate for 1 hour. Put on high flame. When liquid comes to a fast boil, lower flame. Cook until most of liquid has evaporated and chicken is tender.
