Cheesy vegetable chowder
Ingredients/Components
- milk - 2 c
- all-purpose flour - 1/4 c
- margarine - 1/4 c
- paprika - 1/8 tsp
- pepper - 1/4 tsp
- clove garlic, minced - 1 item
- chopped onion - 1/2 c
- chicken broth
- can whole kernel corn, drained - 1 oz
- diced pimiento - 2 Tbsp
- prepared mustard - 1 Tbsp
- sliced carrots - 3/4 c
- sliced celery - 1 c
- cubed potatoes - 1 c
- c - 2 oz
How to make cheesy vegetable chowder:
Combine first 6 ingredients in large Dutch oven; bring to boil. Cover, reduce heat and simmer 15 to 20 minutes or until potatoes are tender. Stir in corn; remove from heat. Melt margarine in heavy saucepan over low heat. Add flour, stirring until smooth. Cook 1 minute, stirring constantly. Gradually add milk; cook over medium heat, stirring constantly until thickened. Stir in remaining ingredients. Cook until cheese melts, stirring constantly. Stir cheese mixture into vegetable mixture. Cook until heated.
