Cheesy potato soup
Ingredients/Components
- milk
- salt - 1 tsp
- flour - 6 Tbsp
- butter - 6 Tbsp
- water - 2 qt
- pepper - 1/2 tsp
- chopped onion - 1/2 c
- carrots, diced - 2 item
- stalks celery, diced - 6 item
- bacon, cooked and crumbled - 1/2 lb
- medium potatoes, peeled and diced - 6 item
- American cheese, chunked
How to make cheesy potato soup:
Combine potatoes, carrots and celery. Add water. Cook until tender, about 20 minutes. Drain, reserving liquid and setting vegetables aside. Saute onion in butter. Stir in flour and salt and pepper. Gradually add milk, stirring constantly until thickened. Gently stir in cooked vegetables. Add 1 cup or more of reserved cooking liquid until soup is desired consistency. Add cheese. Stir gently.
