Cheesy potato skins
Ingredients/Components
- vegetable oil - 1 item
- shredded Cheddar cheese - 1 c
- seasoned salt - 1 item
- slices bacon, cooked and crumbled - 6 item
- medium baking potatoes - 3 item
- commercial sour cream - 1 item
How to make cheesy potato skins:
Scrub potatoes thoroughly and rub skins with oil; bake at 400° for 1 hour or until done. Allow to cool to touch. Cut in half lengthwise; carefully scoop out pulp, leaving 1/4 to 1/8-inch shell. (Pulp may be reserved for mashed potatoes or other uses.) Cut shells in half crosswise, and deep fry in hot oil (375°) for 2 minutes or until lightly browned. Drain on paper towels. Place skins on a baking sheet; sprinkle with salt, cheese and bacon. Place under broiler until cheese melts. Serve with sour cream.Recipe categories: Appetizers, Side dish, Potato.
