Ingredients/Components
- sugar - 1/4 c
- vanilla - 1/2 tsp
- pkg
- milk - 2 Tbsp
- egg - 1 item
- all-purpose flour - 1 c
- firmly packed brown sugar - 1/2 c
- softened butter - 1/3 c
- lemon juice - 2 Tbsp
- chopped walnuts or pecans - 1/2 c
How to make cheesecake squares:
Filling:1 (8 oz.) pkg. cream cheese1/4 c. sugar1 egg2 Tbsp. lemon juice2 Tbsp. milk1/2 tsp. vanilla Heat oven to 350°. In a large mixer bowl combine flour, brown sugar and butter. Beat at low speed, scraping bowl often, until mixture is crumbly (2 to 3 minutes). By hand stir in nuts. Reserve 1 cup for topping; press rest on bottom of an 8-inch square pan. Bake 8 to 10 minutes or until lightly browned.Meanwhile in a small mixer bowl. Combine all filling ingredients. Beat at medium speed, scraping often until smooth (4 to 5 minutes). Spread over hot partially baked crust; sprinkle with reserved crumb mixture and bake 25 to 30 minutes, or until golden brown. Cool completely. Cut into bars and store refrigerated. Yield: 25 bars.
