Cheeseburger soup
Ingredients/Components
- milk
- sour cream - 1/4 c
- salt - 3/4 tsp
- flour - 1/4 c
- shredded carrots - 3/4 c
- pepper - 1/2 tsp
- chopped onion - 3/4 c
- chicken broth - 3 c
- shredded sharp Cheddar cheese - 2 c
- hamburger - 1/2 lb
- diced celery - 3/4 c
- dried basil - 1 tsp
- dried parsley - 1 tsp
- margarine, divided - 4 Tbsp
- fresh garlic to taste - 1 item
- diced and scrubbed potatoes - 4 c
How to make cheeseburger soup:
Brown beef with garlic. Saut?© carrots, onions, celery, basil and parsley with 2 teaspoons margarine until vegetables are tender. Add potatoes, broth and beef. Bring to boil. Reduce heat; cover and simmer 10 to 12 minutes. In skillet, melt 2 teaspoons margarine. Add flour. Cook and whisk for 3 to 5 minutes or until bubbly. Add to soup; bring to boil. Cook and stir for 2 minutes. Reduce to low; add cheese, milk, salt and pepper. Stir and cook until cheese melts. Blend in sour cream. Sprinkle a little cheese on top in individual bowls for color.
