  • pkg - 1 oz
  • plain flour - 4 Tbsp
  • eggs, well beaten - 3 item
  • Feta cheese - 1 lb
  • carton cottage cheese - 1 oz
  • Romano cheese - 1 c
  • filo thin pastry - 1 lb

How to make cheese triangles:

Beat eggs with electric mixer until fluffy. Add cream cheese, cottage cheese, Romano cheese and flour. Continue beating until well blended. Crumble Feta cheese with fork and combine with egg mixture.

Open filo and unroll dough so that the leaves are longer horizontally than vertically. Cut the leaves in half vertically with kitchen shears. With each half of each leaf, spray with a cooking spray or brush with butter before folding in half horizontally. You should now have a leaf which is approximately 3 x 12-inches. Place approximately 1 tablespoon of the cheese mixture onto the left end of the rectangle of filo. Begin folding into a triangle by first folding the top left corner over the cheese mixture to the bottom edge of the rectangle in a triangle fold. Next, fold the package from left to right at the vertical edge of the package. Fold the package again, from the bottom to the upper edge of the filo so that the lower left corner is now at the upper right corner. Continue folding the filo in this fashion until the rectangle of filo is completely used and the bundle is a triangular shape.

When the bundles are made, spray them with another coat of cooking spray and place them on a cookie sheet. This can also be done as you make each one individually to save on counter space and time. Bake at 375° for 20 or 25 minutes or until golden brown. Serve warm. Makes approximately 40 triangles.
