Cheese potato puff
Ingredients/Components
- milk - 1 c
- butter - 3/4 c
- eggs, beaten - 2 item
- 8 oz - 2 c
- salt, divided - 1 tsp
- fresh or dried chives optional - 1 item
How to make cheese potato puff:
Place potatoes in a large kettle; cover with water. Add 1/2 teaspoon salt; cook until tender. Drain; mash potatoes until smooth. In a saucepan, cook and stir butter, cheese, milk and remaining salt until smooth. Stir into potatoes; fold in eggs. Pour into greased 3-quart baking dish. Bake uncovered at 350° for 40 minutes or until puffy and golden brown. Sprinkle with chives if desired. Yield: 8 to 10 servings.Recipe categories: Lunch/snacks, Main dish, Casseroles.
