Ingredients/Components

  • eggs - 2 item
  • salt - 1 tsp
  • pepper - 1/8 tsp
  • parsley flakes - 1 tsp
  • Mozzarella cheese, shredded - 1/2 lb
  • jar spaghetti sauce - 1 lb
  • Ricotta cheese or cottage cheese - 2 lb
  • box manicotti shells - 1 item
  • grated Parmesan cheese plus extra to sprinkle on top - 1/2 c

How to make cheese manicotti:

Mix all ingredients (except sauce) thoroughly. Cook manicotti shells in boiling water for 15 minutes, occasionally stirring gently. Drain, handling carefully. Stuff each shell with filling.

Pour enough spaghetti sauce to cover bottom of a flat, 3-quart capacity baking dish. Lay shells side by side. Pour remaining sauce over the manicotti. Sprinkle top with extra Parmesan cheese, if desired.

Bake at 350° for 40 minutes or until hot and bubbly. Serves about 6 persons.
