Ingredients/Components
- cooked, mashed carrots
- sugar - 1/2 c
- salt - 1/2 tsp
- ginger - 1/2 1
- nutmeg - 1 1
- cloves - 1/4 1
- slightly beaten eggs - 3 item
- milk
- can evaporated milk 3/4 c - 1 oz
How to make carrot pie:
Thoroughly combine carrots, sugar, salt and spices. Add eggs, milk and evaporated milk and blend. Pour into unbaked pie shells. Bake in very hot oven at 450° for 10 minutes, then in 325° oven about 45 minutes or until mixture does not adhere to knife. Cool and top with whipped cream to serve.Note: Variation in spices. Use the first measurement for golden mildly spiced pie or use second for richly spiced pie.
