  • sugar - 2 c
  • cinnamon - 2 tsp
  • eggs - 4 item
  • vanilla - 1 Tbsp
  • salt
  • flour - 2 c
  • coconut - 1/2 c
  • grated carrots - 2 3
  • baking powder - 2 tsp
  • baking soda
  • powdered sugar - 1 lb
  • chopped walnuts
  • can crushed pineapple, drained - 1 oz
  • white raisins - 1/2 c
  • oil canola
  • Combine the first 6 ingredients in a bowl
  • butter or Promise margarine - 1 c

How to make carrot cake:

Preheat oven to 350°. Combine the first 6 ingredients in a bowl. In a 2nd bowl, combine the next 3 ingredients. Mix both bowls together and add carrots and pineapple. Mix well; add the rest of the ingredients. Blend well; bake at 350° for 30 to 40 minutes. Makes 3 (8 or 9-inch) round or one 13 x 9-inch.Frosting For Carrot Cake:1 (8 oz.) pkg. cream cheese1/2 tsp. vanilla1 c. butter or Promise margarine1 lb. powdered sugar Mix with electric mixer; refrigerate until needed.
