Ingredients/Components
- sugar - 2 c
- cinnamon - 2 tsp
- eggs - 4 item
- vanilla - 1 Tbsp
- salt
- flour - 2 c
- coconut - 1/2 c
- grated carrots - 2 3
- baking powder - 2 tsp
- baking soda
- powdered sugar - 1 lb
- chopped walnuts
- can crushed pineapple, drained - 1 oz
- white raisins - 1/2 c
- oil canola
- Combine the first 6 ingredients in a bowl
- butter or Promise margarine - 1 c
How to make carrot cake:
Preheat oven to 350°. Combine the first 6 ingredients in a bowl. In a 2nd bowl, combine the next 3 ingredients. Mix both bowls together and add carrots and pineapple. Mix well; add the rest of the ingredients. Blend well; bake at 350° for 30 to 40 minutes. Makes 3 (8 or 9-inch) round or one 13 x 9-inch.Frosting For Carrot Cake:1 (8 oz.) pkg. cream cheese1/2 tsp. vanilla1 c. butter or Promise margarine1 lb. powdered sugar Mix with electric mixer; refrigerate until needed.Recipe categories: Desserts, Cakes, Carrots.
