  • sugar - 2 c
  • cinnamon - 2 tsp
  • eggs - 3 item
  • vanilla - 2 tsp
  • salt - 1 tsp
  • flour - 2 c
  • butter - 1/4 lb
  • coconut - 1 c
  • oil
  • grated carrots - 2 c
  • baking soda - 2 tsp
  • powdered sugar - 2 lb
  • dash of salt - 1 item
  • chopped walnuts - 2 c
  • crushed pineapple - 1 c
  • Add dry ingredients, then everything else

How to make carrot cake:

For cake, blend oil, eggs and sugar. Add dry ingredients, then everything else. Bake at 350° until done. Cake will spring back and pull away from sides of pan when done.Icing:8 oz. cream cheese1/4 lb. butter2 lb. powdered sugar1 tsp. vanilla dash of salt Let cheese and butter stand at room temperature until soft. Blend well. Add powdered sugar. Blend until very smooth. Add salt and vanilla and mix well.
