Ingredients/Components

  • water
  • grated carrots - 1 c
  • baking powder
  • baking soda - 1 tsp
  • honey - 3/4 c
  • ground cloves - 1/4 tsp
  • ground cinnamon - 1 tsp
  • ground allspice - 1 tsp
  • freshly grated nutmeg - 1/2 tsp
  • whole wheat pastry flour
  • wheat bran - 1/3 c
  • raisins or other dried fruit - 1 c

How to make carrot cake:

Preheat oven to 350°. In bowl, mix together all dry ingredients well. Mix together all liquid ingredients in separate bowl. Fold dry ingredients into the wet ones and mix well. Do not overmix. Pour into a 9 x 5 x 3-inch nonstick loaf pan. Bake for 1 hour and 15 minutes or until toothpick comes out clean.
