Ingredients/Components
- water
- grated carrots - 1 c
- baking powder
- baking soda - 1 tsp
- honey - 3/4 c
- ground cloves - 1/4 tsp
- ground cinnamon - 1 tsp
- ground allspice - 1 tsp
- freshly grated nutmeg - 1/2 tsp
- whole wheat pastry flour
- wheat bran - 1/3 c
- raisins or other dried fruit - 1 c
How to make carrot cake:
Preheat oven to 350°. In bowl, mix together all dry ingredients well. Mix together all liquid ingredients in separate bowl. Fold dry ingredients into the wet ones and mix well. Do not overmix. Pour into a 9 x 5 x 3-inch nonstick loaf pan. Bake for 1 hour and 15 minutes or until toothpick comes out clean.Recipe categories: Desserts, Cakes, Carrots.
