Ingredients/Components
- sugar - 1 c
- cinnamon - 1 tsp
- cream cheese
- eggs - 2 item
- vanilla - 1 tsp
- salt - 1/4 tsp
- flour - 1 c
- butter - 1/4 c
- oil - 2/3 c
- soda - 1 tsp
- grated carrots
- baking powder - 1 tsp
- powdered sugar - 3 c
- pecans - 1/2 c
- orange peel - 1/2 tsp
How to make carrot cake:
Frosting:8 oz. cream cheese1/4 c. butter1 tsp. vanilla1/2 tsp. orange peel3 c. powdered sugar1/2 c. pecans Mix oil, eggs and sugar. Combine the dry ingredients and add. Mix in the grated carrots. Bake in an 8 x 8-inch pan for 30 minutes at 325°. (Double this recipe for a 9 x 13-inch cake; do not double frosting recipe.)Frosting: Mix cream cheese with mixer. Add softened butter and mix. Add vanilla, orange peel and powdered sugar. Beat well. Spread on cooled cake. Top with chopped pecans.
