  • sugar - 2 c
  • Wesson oil
  • eggs, unbeaten - 4 item
  • flour - 2 c
  • baking powder - 2 tsp
  • soda - 2 tsp
  • cinnamon - 2 tsp
  • raw carrots, grated - 3 c
  • pecans, chopped fine - 1 c
  • pinch of salt - 1 item
  • Add eggs, one at a time
  • cream cheese - 8 oz
  • stick margarine - 1 item
  • vanilla - 1 tsp
  • chopped pecans optional - 1 c

How to make carrot cake:

Cream sugar and oil until fluffy. Add eggs, one at a time. Cream well. Sift flour, baking powder, salt, soda and cinnamon together. Mix flour mixture and sugar mixture together. Fold in carrots and pecans. Bake at 350° for 30 to 40 minutes.Cream Cheese Frosting:1 box powdered sugar8 oz. cream cheese1 stick margarine1 tsp. vanilla1 c. chopped pecans (optional) Sift powdered sugar. Melt margarine and mix in cream cheese. Cream well with sugar. Mix in vanilla. Spread onto completely cool cake layers.
