  • sugar - 2 c
  • cinnamon - 2 tsp
  • eggs - 4 item
  • vanilla - 2 tsp
  • pkg - 8 oz
  • salt - 2 tsp
  • flour - 2 c
  • soda - 2 tsp
  • nuts - 1 c
  • raisins - 2 c
  • salad oil
  • stick butter or margarine - 1 item
  • shredded carrots or 3 jars junior baby food carrots - 3 c
  • No sifting needed

How to make carrot cake:

Mix all ingredients in a large bowl with an electric mixer. No sifting needed. Bake in a greased 9 x 13-inch pan for 40 to 45 minutes at 350°.Cream Cheese Frosting:1 lb. powdered sugar8 oz. pkg. cream cheese1 stick butter or margarine2 tsp. vanilla Mix margarine and cream cheese until smooth. Add sugar and vanilla. Mix until smooth. Spread on cake.
