  • eggs - 3 item
  • chopped pecans - 1/2 c
  • water - 1/2 c
  • lemon juice - 2 tsp
  • Crisco oil - 1/2 c
  • can crushed pineapple undrained - 1 oz
  • Duncan Hines carrot cake mix - 1 pkg
  • Beat at medium speed for 2 minutes
  • can Duncan Hines vanilla frosting - 1 item

How to make carrot cake:

Blend all ingredients in large bowl. Beat at medium speed for 2 minutes. Bake in 13 x 9 x 2-inch pan or two layers at 350° for 35 to 40 minutes. Cool.Icing:4 oz. softened cream cheese2 tsp. lemon juice1 can Duncan Hines vanilla frosting For icing, in medium-size bowl, blend cream cheese and lemon juice until blended. Stir in vanilla frosting, then frost cake. Keep in refrigerator.
